Fruit Cobbler.

Preheat oven to 400 degrees.


Arrange in an 8 inch pan or round cake pan: 3 cups of fresh fruit (sliced peaches, blueberries, or plums)


Mix together: 2/3rd cups of granulated sugar, 2 tablespoons all-purpose flour, and 1 half tsp ground cinnamon.


Pour over fruit and dot with 2 tablespoons of butter if desired, (always have done)


Sift together into a bowl (I don't sift):


1 cup all-purpose flour, 2 tablespoons granulated sugar, 1 and 1 half tsp baking powder, and 1 half teaspoon salt.


Mix in with a fork or pastry blender 1 half cup shortening and stir in 3 teaspoon milk and 1 egg.


Drop by globs on top of the fruit mixture (I usually get about 6 globs on top)/ Bake for 25-30 minutes or until filling is bubbling in the center. If the tops start browning before it is done, lay a piece of foil over the top. And serve with a bit of whipped cream!
