I have only seen 1 good story about this and it's called Apotheosis by Lord Wolfe, the story is on fanfiction.net if you want to read it.

I want to do the same basic thing, Izuku gets his dreams crushed by All Might, realizes he can make power for himself, begins to create Infinity stones from quirk factors, creates the infinity gauntlet to harness the full power of the stones, then steals OFA from All Might to make his power stone.

The difference is that this Izuku will have a few extra infinity stones, because sense he created them all anyway, he doesn't need to be limited to only six, or five so far with the mind stone still being promised to come.
